Pork spare ribs with rice.
I did a roast beef joint today, one of the 75% off ones from Aldi just before Christmas. It had bacon on top, lots of it, with a herb butter underneath. It was put in the pressure cooker for 2.5 hours, and it was absolutely delicious. The leftover will make me very happy for lunch for two or three days next week.

Tomorrow we'll have roast chicken in a tray bake with roast veg, with salt and vinegar roast potatoes.
Beef and veg casserole this evening just need to dig up parsnips, JA's and collect a few herbs.
An unexpected cooked breakfast round at a friend’s house. After helping move a chicken house.
So just toast with marmite for tea.
Yellow stickered salmon fillet, glazed with Tamari sauce on a bed of Red Quinoa grown in Somerset for Hodmedod's.

The red quinoa splits its dark shell during cooking and small white "shoots" emerge. It looks like a mound of germinating seeds. It has more texture than rice - I'm becoming a convert.Big Grin
Roast chicken and trimmings, gonna start saving bones etc for SC stock.

Same as yesterday so a quick dinner for us today.
Monday usual, leftover chicken tonight mixed with chorizo & rice
Tonight we're having chicken, roast peppers and salad in wraps with potato, chive and parsnip latkes, which are basically healthy rostis. They smell lovely in the oven.
Last night slow cooked half price chicken legs in tomato, onion, garlic, olives, dried ceps and espelette - the left over liquid will be a base for soup later in the week.
Tonight gram flour pancakes with left over curries from last week.
