I am gunna try a vegetable lasagne later. Cool I can't seem to find a recipe on the veggie recipes section? Huh   Maybe I just aint looking hard enough (and tbh I can't be ar***d to troll through the whole thread!) so I thought I would try the recipe below. Smile

It seems to make a heck of a lot? so I hope I ike it as a fair portion will find it's way into the freezer! Rolleyes

Lasagne is completomundo and is not three bad! Cool

I have no scales so a bit of guestimation was called for but turned out ok. After i searched the fridge I realised i had no sweet potato so just added some mushrooms and a green pepper instead! Rolleyes

Of course after an intirial taste............I had to have seconds. Smile As you will see from the piccies, there is a LOT of lasagne, in fact enough for a good few meatless Mondays in the future, once I get the portions frozen.

I've never made a lasagne of any description before and although it was a bit of a chew on, I am pleased with the outcome and it was cheap to make! Cool
Roast beef with all the trimmings.
Nice Lasagne, Vinny. I've tried a couple of times but never managed to get the pasta sheets soft. Given up now, I just mix any old pasta into the sauce and skip the white sauce stage.

My day's meals:-
B. Sourdough Challah bread with the inevitable strawberry jam
L. Salad bag with pumpkin seeds, tomatoes and cucumber and mayonnaise (5p)
D. Mushrooms cooked in a jar of Coconut Korma Sauce (YSd to 19p) with a packet of Wholegrain rice with pearl barley and Quinoa. Made enough for another meal so cost 10p.
An Aldi icecream (30p)

Total cost 45p.All the rest FREE or from the garden.

I don't normally like the white bechamel sauce in bought Lasagne but this was quite nice with the mixture of chedder and Mozzarella. Pasta was soft but Lasagne was firmer than I thought it would be with all the wet ingredients. Just had some cold for supper as well! Cool
YS chicken Kiev with garden veg and the first sweetcorn last night, scrummy.
Yesterday Briam with mackerel this evening Spam, egg, chips and mushrooms.
Not sure about todays meal yet, but I am sure Veggie Lasagne will come into the equation at some point. Rolleyes The problem is I don't think I have  enough room in the freezer for half a dozen portions so I will probably have to munch my way through a goodly amount Smile . Not really a problem as it's a 'Summery' meal which is light on the stomach! Cool
Forgot it was Fishy Friday so as well as the above forementioned I have just cooked off two haddock fishcakes and a frozen fish pie. Big Grin

D. Last night's leftovers - Mushrooms cooked in a jar of Coconut Korma Sauce (YSd to 19p) with a packet of Wholegrain rice with pearl barley and Quinoa. Made enough for another meal so cost 10p. Added sugarsnap peas.
