Gorgonzola and mushroom tarts.
Leftover Gorgonzola from Christmas - no visitors, so no one to help me eat it.
Was dated 13 Jan, but I assumed it would be fine as it was going to be cooked!
Puff pastry (bought) that has been in the freezer for too long and a posh jar of chargrilled mushrooms in olive oil that was a present in a mini hamper.
All of it needed to be used up, and, even with generous portions it made enough to do us tomorrow as well.
Result!

Goggled a recipe and made the mixture.
Dug out the cast iron crepes pan brought back in my hand luggage from France donkey's years ago and the Le Creuset omlette pan which was sitting on top of it.

As a last resort, tried the cast iron frying pan that I usually stirfry veg in. Its one of a set of 3 from a pre-decimalisation £ store.
You guessed - the pancakes were perfect. Slight hint of onion on the first one but didn't stick at all.
Pancakes and lemon curd for tea.............eventually. Whenever I make pancakes, the first one goes in the bin each time. Whenever I make pancakes the first two or three go straight into my mouth.

We've pencilled in christmas leftovers turkey & stilton pie with mash and green beans.
