There's so many varieties too. It's great for me when I want to lose a bit of weight, which I currently am, but it's filling and very tasty.
Anything Mexican is a winner for me to be fair

Never really had much success making sponge cakes in the past. They’ve always been dry and house brick like

That is right up my street, so moist and gooey. I've bookmarked that recipe for trying out. If you like intense chocolate gooeyness try Nigella's Guinness cake, it's one I really like, quite easy and can double up as a celebration cake or a dessert.
