Not so much a recipe, but I have just scraped a boat load of parsnips and according to Bren I need to roast them first before freezing.
I have boiled them for a short time, put them into collander to drain, and then added them to trays and put them in the oven to roast. They have baking powder and olive oil added. I'll give them half an hour and let them cool overnight then its into the freezer tomorrow.
