Can I store lifted beets in spent compost?

If you have already lifted them, I would say yes.
If not, I usually leave them in the soil and you could cover shoulders with used compost to prevent frost getting to them.

I wanted to lift them to sort the area they are growing. I've frozen some already so will do 50/50 freezing and storing to see what happens

They pickle well Danny?, I tend to eat beets in sandwiches so don’t mind if they are simply boiled or pickled.

I didn't even know freezing beetroot was something you could do!
Never have any to spare as I usually pull just a few at a time to eat fresh and do a few jars of pickled beets just because I can.

Will try and pickle a few although Mrs hates pickled beetroots

I do to Danny, which is why I do a sweet pickle it's not as vinegary. I can't eat shop-bought stuff it's yucky.
