The only thing I've ever made with tomatillos is chilli verde - https://www.seriouseats.com/pressure-coo...rde-recipe
It was really nice. Not sure why I never made it again. The rest of the fruit sat in the freezer for a year, then they might have ended up in a chutney, I can't remember.

I keep finding self-seeded tomatillos in pots, despite not growing them for 3 years.
