Last night I did homegrown red kuri squash stuffed with bulghur wheat and lentils, and topped with parmesan:

Recipe here: https://www.thekitchn.com/how-to-make-st...chn-101662

It's a really versatile "use what you have in the fridge/pantry" recipe which I'm sure I'll be doing again! You just mix your protein of choice (meat, lentils, whatever) with a grain and some vegetables and seasoning - it suggests cheese as well, but I left that out of the filling and just put a bit on top.

For this one I used a pouch of Tesco Bulghur Wheat & Green Lentils, which comes ready flavoured with red & green peppers, tomato, onion, etc, so it was really quick and easy and made for very little washing up Big Grin
How much veg and wildlife can I pack into a 6m x 8m garden in suburban Cambridge? Let’s find out!  Smile

Mr E is making one of my favourites tonight, at my request - pasta with a sauce of leeks and creme fraiche, liberally sprinkled with parmesan. Basically cheese'n'onion pasta Big Grin
