I didn't follow a recipe last night. I browned off a small pack of low fat beef mince, chucked in onion, peppers, a load of courgette (marrow), a packet of mediterranean spices (originally intended for chicken in a bag, but fajita spice pouches work really well too). Chuck in a cup or two of uncooked rice, with twice the amount of water, bring to the boil, turn down to a simmer and 15 minutes later you have made dirty rice Sounds a bit like a rissotto?
No, it's not as saucy as risotto, as you don't stir it while it's cooking. It's more like rice with lots of other stuff mixed in. The rice is more defined. Well, either way, I highly recommend it
It's also called one pot mexican rice sometimes. which maybe is more appealling lol Had to get some from Aldi today after reading your post!
They don't do those in my Aldi, even online

Danish pastry with chocolate in it.

D. More sliced and fried baby potatoes (1p) and half a tin of Heinz "Five beans".

Not much cooking after a busy days roofing. Chilli & rice. Chilli already cooked from the freezer. So just got to cook the rice.

Made some kind of a hash with some home-grown courgettes and potatoes (plus bought onions) and scattered some cheddar over the top to melt. It was good!
Formerly self-contained, but expanding my gardening horizons beyond pots!
