I’m try a chive flower & cider vinegar.
Apparently it’s fantastic on your chips and it tastes like the vinegar from your pickled onions. No harm in giving it a try.
And it looks pretty.

Will the chive flowers not discolour to a horrible brown colour after a short time?⁉️

You remove the flowers after a fortnight and you’re left with pinkish vinegar

ohhh, do all we do s just add the flowers straight to vinegar? Does it have to be cider vinegar, we have the spice vinegar from last winters pickles, may have some sweetened ready as well..

Yeah just add straight to vinegar. I think cider or white vinegar would be best (but I’m just guessing). It’s apparently like pickled onion vinegar when it’s done with a slight pinky colour.

We tried ours on our chips last night for the first time. It really does taste like the vinegar from a pickled onion jar. And it’s a lovely pinky colour
