My favourite is the fatalii; I love the combo of heat and beautiful citrus flavour. Are there other highly flavoured varieties that anyone can recommend?
The ancho will be fully ripened and dried and the jalapenos get pickled. I also make flavoured jellies. The cayenne and cheltepin will also be dried, the latter ground, and the excess rest shoved in the freezer whole.

I’ve tried my first beaver dam chilli. I can highly recommend them. Beautiful and sweet at the point & a good bit of heat That builds at the other end. They’re big as well.
