I always make too many veg for for one person for Sunday dinner. If I have swede I use a whole one and likewise with cabbage. Consequently I had quite a bit of cooked veg left for this meatless Monday. I decided to make this recipe:-

Mine looked just like the piccie. I got to use a cup measure which I found at the back of a drawer for the first time and finished off a jar of Tomato,sultana & ginger chutney I made in 2020!
I suppose it was ok, if a bit bland and when the frtters are stacked on top of each other with an egg on top, when eaten they just resemble Pan haggerty without the meat.
If I made it again, which I probably will, I think I would spice it up a bit with chilli, curry or Harissa or suchlike?
