Ahh. I overlooked the midweek meal and focussed on using a glut of eggs.
How about Beans on toast with a fried egg on top, followed by Zabaglione?
I usually have 3-4 dozen eggs hanging around - they keep for weeks. When I need to use some up, I cook them for the dogs!
