MrPP has been paid for a quick fix-it job in hen's eggs so I suddenly have two dozen delicious free range fresh eggs to use up in a main dish or two (or three!). We've had a lot of quiches, baked eggs and shakshuka recently, but beyond that my mind is a blank I don't much like omelettes, just to be difficult
and it would need to be vegetarian, it being a weekday
What egg-based recipes do you lot cook?

Oh, rushes to soak some dried ceps from last year!
Nice and simple a 3 course meal of pancakes
Starter - Savory pancake (made with light beer instead of milk) with prawn cocktail
Mains - Savory pancake (made with dark beer or ale ) with a chicken curry filling, lots of chilli
Desert - sweet pancake / crepe with mixed berries fruit and cream.

Last night we had a kind of piperade - a nearly local basque dish - but instead of peppers, I added some broad beans and leeks from the freezer into the tomato and espelette sauce.
This morning I'm making a batch of icecreams, coffee and blackcurrant ripple.

But we do like a pancake - have you tried Auvergne buckwheat and yeast pancakes? They're fabulous, interestingly solid for a pancake.
Egg curry tonight, and then I think we'll be needing a lot of roughage ...
