I watch the plants - you need the seed head/ pod of whatever you are saving to dry as much as possible while on the plant.
That does mean that some plants will stop producing as it has already set seed.

I often use wedding favour bags to bag the seed head to stop it bursting open/or all the seed blowing away.

I noticed a seed heading splitting on my walky leeks so bagged a couple today.

I just came across this site which has a lot of useful films on saving your own seeds, mainly vegetables.
