I cut up a couple of beef steaks into 'two bite size' pieces and did the same with some breast of lamb. Cooked off in air fryer and had the beef dipped into a dollop of horseradish.
The lamb took 10 minutes longer as I like it crunchy. I had the lamb pieces dipped into a dollop of mint sauce.
I now have quite a few eggs from the farm so will probably have an omelette after evening training session?

Enchiladas with veg rather than salad. P had stewed bottled apple, sponge and custard. Tonight it will be pot luck from YS as its shopping day with rhubarb for dessert.
Gardening is an excuse not to do housework

Bacon and eggs for breakfast then went shopping and took advantage of Easter deals on meat. One of the large beef roasting joints I chopped up into two small joints plus three large steaks. I had one of the steaks this evening with garlic butter to see what they were like before chopping the other large beef joint up into similar steaks. The steak was very tender and juicy so tomorrow I will start chopping the other into steaks.
