Hi peeps. Back for more advice. I don't really do recipes but would like to make a sweet green cucumber based relish. 
I have cleaned and de-seeded two cucumbers and diced them.I have also diced a green pepper and salted the whole lot which is sitting in a colander, draining.
Other green 'stuff' I have available are celery and in freezer Jalapeno chillies and green gooseberries. I will also probably add an onion.
I just wondered your advice on quantities including sugar and vinegar and whether my experiment would work do you think?
