I've always loved my Sunday dinner, especially when it's a beef joint. This weeks beef was a piece of 'salmon cut' which I hadn'r had before? It was about £6.00 and was ample for one.
A while ago I bought a frozen bag of roast vegetable on yellow sticker for 48p. It was only carrot, parsbip and onion but 24p's worth gave me enough for two beef dinners.
I have had my frst sitting with lovely gravy made from the goodness of the joint cooked for 2 hours and 40 minutes. After much experimentation with oven timing and cut's of meat, I think I have finally found the 'sweet spot'.The only problem is when i am stuffed, all plans for work to be carried out on Sunday afternoon, go out the window!
The second sitting will be later today with the plated dinner microwaved for ease and quickness and if I am still hungry after that I have the remains of last nights beef stew in the slow cooker.
