An Alphabet of Kales (almost).

The Austurian tree cabbage I have semi perennialised has a different flavour and colour to all of the kales methinks. Birds don't seem to like it much so that is a bonus. The leaves are soft and light green and I can only liken it to a cabbage/lettuce cross? I know there is no such thing,but it seems to 'wilt' like lettuce or spinach when cooked?
