When I am making Biltong or Jerky (not sure what the differnce is?) I don't fully dry it and the pieces are slightly pliable. I then freeze it and take out only enough to use in a couple of days.
The Pemmican mince and blueberries will be different as they need fully drying and then adding to food processer to blitz into a powder. The resultant powder will then be mixed with a similar weight of melted dripping and poured into moulds. I haven't got any suitable choccy bar moulds as yet so I will have to possibly pour mixture into a tray and cut bars to size?
I could buy 'Carniore bars' but they are ridiculously expensive so I thoguht I would have a go myself after watching youtube videos!
Sounds like an awful lot of faff to me, Vinny, but then, your diet is a complete mystery also. I'm really pleased it works for you though.
It was always going to be an experiment, but I wont be making It again.I will however make some more Biltong as my supply is just about exhasuted
