Todays achievement is that I finally got round to starting a batch of Pemmican! I usually buy high fat beef mince because I need the fat (to be converted into the internal carbs i need) as I am mostly carb free. For the Pemmican because the mince is dried in the dehydrator I had to buy the more expensive low fat mince!
Anyway, after adding salt & pepper and rolling the mince between two sheets of greasproof paper to get it as thin as possible I managed to fill two trays in my dehydrator. I have also put a punnet of blueberries to go with it in another tray.
When I am making Biltong or Jerky (not sure what the differnce is?) I don't fully dry it and the pieces are slightly pliable. I then freeze it and take out only enough to use in a couple of days.
The Pemmican mince and blueberries will be different as they need fully drying and then adding to food processer to blitz into a powder. The resultant powder will then be mixed with a similar weight of melted dripping and poured into moulds. I haven't got any suitable choccy bar moulds as yet so I will have to possibly pour mixture into a tray and cut bars to size?
I could buy 'Carniore bars' but they are ridiculously expensive so I thoguht I would have a go myself after watching youtube videos!
