There is a variety called Godiva which has hull-less seeds but, I'm told, the pumpkins themselves aren't good for eating.I did eat some of my pumpkin seeds last year, and the flesh of course. I salted them, nuked them in the microwave and ate them like salted peanuts. Apparently this is not the best way to get the goodness from them though?
So, in a pumpkinshell, grow any pumpkins, save the seeds, and pop them yourself.
Dehulling may not be as easy as I thought - if you want lots of seeds.
