As its Meatlees Monday I thought I would try out the courgette curry recipe with rice. 
The recipe makes a LOT of curry and maybe I should have stuck to the spice & chillie amounts as I added extra. 
Still quite palatable and an easy way to whittle down my courgette glut with approximately four servings. 
If I try it again I will make it a lot more basic by adding the browned cougettes to a curry sauce.
