I like a really enormous salad with at least five or six full portions of veg, a bit of protein (which might be one of the veggies), and a dressing. For example, grated carrot, tomatoes, radishes, pre-cooked beetroot (I'm buying the vacuum packs currently, but plan to pre-roast my own in future), cucumber, peppers, drizzled with some extra-virgin olive oil and good balsamic vinegar, then topped with some ricotta cheese and a few pumpkin seeds. Delicious - and will be even better once the veggies are my own!
