Mu Mum always made with jam tarts with leftover pastry but you could fill them with anything you like.

I make cheese and onion pasties mostly because I've always got cheese in the fridge.

Cook for longer and if the top is going to go a little too brown cover the top with foil, take it off 5mins before removing from the oven so it's crispy.
.... and corned beef pie does not have gravy!

Vinny you mentioning potato mash and gravy reminded me of Youngest grandson when he was little he didn't like 'pies' so pulled a face  at Shepherds/cottage pies oddly he loved burger meat and mash.
