Starting my 2021 list

8 jars Rhubarb, orange and ginger jam.
6 jars of 3 fruit marmalade (orange, lime & grapefruit)
1 bottle of rhubarb gin.
2 jars of mango chutney.
2 jars of Strawberry jam - finally picked enough to make some jam.:
A jar of Apple Mint Sauce concentrate.
Note for next time - you may think you've picked a lot of mint leaves - but the recipe needed twice as many. There's a lot of mint leaves in 4 oz!!

I used demerara sugar, sweetened vinegar leftover from yesterday mint sauce, homemade grape vinegar made in November 2001, English mustard (not wholegrain) and no garlic or chilli (sorry SC).
For the onions, I used 2 bags of yellow stickered, sliced red onions from Morries salad bar. I hate peeling onions so it saved all those tears being shed!

I've added a yellow stickered bag of sliced sweet peppers to the leftover onions that wouldn't squeeze into the jars, some more 2001 Grape vinegar and a tin of chopped tomatoes - my version of ratatouille.Smile

EDIT The "ratatouille" was perfect in a sandwich.Smile

1 jar of sweet chilli sauce. To go to a BBQ on Saturday.
