Ahh. I overlooked the midweek meal and focussed on using a glut of eggs.Big Grin
How about Beans on toast with a fried egg on top, followed by Zabaglione?
I usually have 3-4 dozen eggs hanging around - they keep for weeks. When I need to use some up, I cook them for the dogs!
One of my favourite meals is baked eggs in a tomato sauce ( chunky frozen tomato usually that I've cooked with onions/garlic) and spinach. You can even add a little chilli or herbs to the tomatoes...or sprinkle on Parmesan or breadcrumbs.
There's a Madeiran soup, a bit like that ^^^. Tomato soup with a poached egg in the bottom of the bowl. Put your soup spoon down into the egg to start and break the yolk so that it spurts up into the soup.
