Two popped up in the pot where last year’s cucumbers were.

Is it a Persicaria/Polygonum/Knotweed/Bistort or my favourite name "Pudding Dock".
Lots of different names, big family but all much the same.

Don’t think so Veggie - the leaves are like a succulent and it’s only about two and a half inches tall. (The photo didn’t show scale - as Father Ted says “near, far”.
