Which Onion to grow from seed?

I seem to have amassed a lot of different onion seeds. Apart from some being white and others red, I'm not sure how they differ. 
Which onions do you recommend growing from seed and when do you sow them please?

Overwintering types I sow in September/October, standard types I sow in February/March. Spring onions I sow from February to October.

Only ones I’ve grown from seed onion shallot zebrune . Confusingly they have shallot in the name but they are actually onions, I believe. They were very good.
Builder that would like to go play in the garden.

I usually grow the red torpedo onions from seed as it's very 'hit or miss' growing any type of red onion from sets. Rolleyes

I'm no help, my red onion sets always bolt so I've vowed to give up on them. I've never succeeded with seed. I do have some winter onion seedlings (senshyu?)growing in the patch but I bet this weather has done for them. I can't go and check on them as the grass is all frosted and would be damaged by my footprints, they'll have to wait until the thaw.
Gardening is an excuse not to do housework
