Soup of the week - Veggie - 23-11-2022 Its the perfect weather for a big bowl of soup. Please share your Soup ideas with us. I make enough for several days at a time, eat it fresh for 2 or 3 days and freeze the rest. My recipe doesn't exist - just a selection of whatever is lying around is bunged in the pressure cooker. It always taste OK, whatever is in it. My soup of the week is Pumpkin, Carrot, fresh ginger and Baked beans. RE: Soup of the week - Bren - 23-11-2022 One of my fave soups is carrot and butter beans. Onion Garlic Carrot Butter beans Stock Some herbs Pressure or slow Cook then purée some of the soup. RE: Soup of the week - Bren - 23-11-2022 Curried parsnip and apple, I’ve got plenty of both just now. https://www.eatingwell.com/recipe/250906/curried-parsnip-apple-soup/ RE: Soup of the week - Vinny - 23-11-2022 Very boring I know but my favourite is Leek & Potato. The list of ingredients is in the name and chopped up and boiled together with a chicken or veggie oxo cube. I like to add a dollop of fresh cream in the bowl when I serve it. So quick and easy to make I like to make small amounts fresh each time, only enough for a couple of bowls full does me. RE: Soup of the week - Small chilli - 23-11-2022 I really like freshly made soup. I’ve stopped making big batches for the freezer. It’s never as good. RE: Soup of the week - SarrissUK - 23-11-2022 I make soup, but almost always potato is the main ingredient along with home made chicken stock, then topped up with whatever veggies I have at hand. I usually bung in whatever needs using up to be honest. I like soup for lunch - it fills me up and it's often healthy and slimming.
