I'm not a fan of alcohol in any form, but I'd like to make elderflower cordial this year. The thing that strikes me is that the recipes I have for cordial are pretty much the same as the recipes for champagne, except for less water. So what's to stop The cordial fermenting into alcohol then? Or is that a risk I have to take?

I made cordial one year and because its got a short shelf life I put it into small plastic bottles and kept it in the freezer until required. Shy

My gran used to make wonderful elder-flower 'pop'.  She had a large basin and added lemons and sugar then floated full elderflower heads upside down on the top. Rolleyes
The pop was always cloudy and prone to exploding bottles now and again but was a wonderfully refreshing non-alcoholic summer drink. Smile

Your elderflower pop would be like ginger beer then, fizzy but not enough alcohol in it to call it an alcoholic beverage. bet you all slept well though Wink

Cordial is made much quicker than the champagne. It only has to steep over night and it's ready to sieve and bottle up. Champagne needs to sit for longer, or have added yeast to get the bubbles.

Vinny plastic milk cartons will not work, the bottle needs to be able to withstand pressure from carbonation I would also worry about sterilisation of used milk cartons
