It's the alphabetical order of the letters. All the others go middle-first-last, but SOP goes last-first-middle.

The Official Answer is "SOP. In the others, the consonants are next but one to each other in the alphabet.!

My guess: they are the only letters that don't appear in something famous (like the Declaration of Independence), but what the something is, I don't know!
