My cheap maslin pan scorches, probably because its not particularly heavy, so I think it's time to invest in a heavier duty, thicker bottomed one. RE: Chutney & jam central - Moth - 08-08-2021 3 jars of cherry plum jam. I don't know why I keep making jam, as I eat very little of it. Still got some bramble from 2018. But when the fruit is free from the hedgerows, I just can't seem to stop myself.... BTW, has anyone else noticed that blackberries are late ripening this year? Round here in the hedgerows they are usually ready to pick by the third week of July, but they are still mostly green, with just a few showing pinkish. RE: Chutney & jam central - JJB - 13-08-2021 Another reason mine burns is the fact I leave it boiling too long without stirring I expect. Don't make a lot of jam as we don't often eat it so every time I attempt jam it's a whole new learning process. RE: Chutney & jam central - Mark_Riga - 13-08-2021 I find making jam in a microwave is good in a pyrex dish, though I need to find a new one as the 8 pint (I think) dish we had got broken earlier this year. If you cook the fruit in the microwave first, no added water is needed. When the fruit is soft, add the sugar and then heat till dissolved and then usually a further 20 to 30 minutes. In the past I've not been very good at checking the temp and sometimes the jam was a bit runny and sometimes very firm but always delicious and never burnt. I got a new thermometer a few years ago that does now for a lot of things.
