Is quince japonica? And what do you do with them apart from jelly?

I've made Quince and Pineapple Jam with them - made up the recipe when I was given a bucket load of each and had to do something with them! This was a long time ago, down under, but it tasted good. That's all I remember.
I've also made Japonica jelly/jam with the other quince. Very fragrant but didn't set well. Would use pectin next time.
