I’d grow the items you eat the most of, plus any that are expensive to buy.

. A lettuce that turns into a green slimy puddle in less than 3 days is over £1.50. hence the want to grow my own again. Even when things are a little tricky to do so

Lettuce is easy to grow as Cut and Come again ( as you know). A fish box of mixed lettuce should keep you supplied.
I'd have a box of rocket, landcress and mustard too to pep up the lettuce.
Anything that needs a "heart" is too risky, in my opinion, so grow kale, not cabbage. A fish box of Dwarf Green Curled or similar?
I'm trying something similar with supermarket veg crates that can be moved around the garden as the fancy takes me! Have carrots in one now.

Cut & come again lettuce, rocket, mustard are growing nicely.
Kale is ready for pricking out.
Supermarket crates are next. When I run out of fish boxes. I usually line the sides of them with compost bags. So I don’t loose loads of compost out the side holes when it rains or I water. Do you?

I put cardboard in mine but I've found that if the cardboard sides aren't covered by compost, they dry out and cave in. Compost bags would be better.
