Going a little bit off track.......WHO ME?............. I tried to tidy the freezer earlier today. This resulted in a strange Fishy Friday mix consisting of two calamari rings that were left in a bag, five fishfingers likewise, one triangular 'thing' likewise which turned out to be a bit like spam with cheese coated in batter, and two cod fillets which must have been at the back for over a year. Cry They were a bit like leather when cooked, but reasonably tasty. The whole lot was smothered in apple cider vinergar on the plate with sea salt and freshly ground pepper. After plate was emptied I put a couple of slotted spoonfulls of tiny boiled spuds and smothered them with butter and mint sauce! Big Grin
Even though I rearranged everything, there's still no space on the freezer shelves! Rolleyes

A vegan meal tonight, red Thai curry. I buy a really tasty paste, brand Thaitaste (https://thaitaste.co.uk). Some people make their own paste. First fry some tofu chopped into squares to brown 2 sides while in another pan cook a load of veg, mainly from the garden. Tonight was onion, carrots, garlic, capsicum,chili, celery, mushrooms, courgette and some kale. A tin of coconut milk and about a kilo of cooked skinned tomatoes are added with the paste. Tonight's batch looks like it should do for 3 more meals for 2. Will be rice tomorrow but likely chips the next day.
