Cake freezes beUtifully. Make a few and freeze in portions?
If I make a sponge cake I keep a bit of the batter back and cook in a shallow layer in a tin and then freeze to put into the base of a trifle in the future along with frozen fruit etc.
SC you said no to stew but have you ever eaten a real Irish stew made with mutton ?

I can give you a quick recipe (my mother’s) if you like

No, that's "caul".
Cawl is a Welsh soup, apparently known as "lobscows" in parts of North Wales so I guess that's SC's "lobbie" that she hates. Wink

Lobs cows! Well you learn something everyday.
Lobscouse is also the start point name and recipe wise for scouse, the liverpudlian stew they are named after. I think lobscouse was a naval term for a kind of stew if I remember rightly.
