I have grown onions from seed this year and some of them have shot others from sets are ok I thought that onions from seed were less likely to shoot so what could have caused this

March and April was very stressful on plants prone to bolting, I watered daily during the hot weather and still some of my onions went to seed. Sometimes the urge to be a parent is just too great for them.
