I’ve had lots of tomatoes all come in together, I’ve been giving them away to friends and family and still have excess tomatoes, so I’ve made tomato sauce by roasting them with some of my home grown garlic and rosemary with some added balsamic vinegar sprayed over them, then blitzed and finally into containers for freezer. These containers has just enough sauce as a base for a curry, chilli, or savoury mince for 2 people.

Nice Can. Mine are all still green. Not had a single one yet.
Good idea … I think I’ll do the same with some of mine.
I also do “moonblush tomatoes” from a Nigella recipe
These are tomatoes that are semi dried in the oven overnight.
I can't be bothered skinning or deseeding so I just chop them up and puree with a hand blender, then use them in place of tinned tomatoes. Not with cherries though as I find the sauce too sweet and they are ridiculously full of seeds. We use 4-6 tins a week usually so we get through them pretty quickly!

My favourite way to use fresh tomatoes is probably bruschetta.

Made some more sauce last night with what was left going soft, put a lot more garlic into this sauce, then got 2 tubs for freezing and a drop left over to make my dinner gravy from. Delicious.

This is very nice and easy to make. It uses 2 pints of cherries which is about 700 grams.
I made caponata no today.. with lits of extra tomatoes- my boys aren't here anymore Sad so I dont get through ad much but it's fabulous on toast Smile
We had Briam this evening its a good way of using up courgettes, tomatoes and potatoes.
