When doing mashed potatoes, I often boil with a chunk of squash/pumpkin and some leek, generally in a pressure cooker. Any liquid left from cooking is used making gravy.

Probably not saving seeds for growing as they're likely to have crossed with others. Of course, I may just scatter them randomly somewhere.
And not saving them to grow does mean you have more to eat
.
I like to dry/shallow fry them until they pop. Some are chewier than others - its a few years since I've had some seeds to pop.
One thing I've learned in the last few days - pumpkins in photos look much larger than they are in the flesh. Wish I could say the same.
