One thought is Jerusalem artichokes  another is himalayam balsam
Definitely not Himalayan balsam. Other than that I can’t help. Sorry

Looks like JA's to me. Maybe they need to dig deeper to find the artichokes?

At what stage in their development do the JA tubers form?

The tubers grow much like potatoes and are harvest able in the autumn.If left in the ground, and providing the slugs don't get them last years tubers will still be there now.

99% sure they're JAs, look super similar to mine.
I will impart this knowledge on to the site. I only grew JAs once many years ago, absolutely loved them but couldn't cope with the tummy ache they gave me Smile

They must only affect certain people as I have never been affected by fartichokes. Rolleyes
