Recipes for small amounts of fruit and veg?

Ideas for when you come back from your plot with a few things but not enough to make them the star performer on your plate!
One courgette, a handful of peas, a couple of spring onions and so on.

My fall back "recipes" are mixed salad, stirfry or soup.
One thing I've never tried, because the name puts me off, are "smoothies". We "smooth" the dog or cat, not our veggies.

But I digress, as usual.  Blush
Since I can usually find lovage, kale and some sort of onion leaves, I've been wondering whether I could "Smooth" them into something.
Having never eaten/drunk one I've no idea what they are - apart from looking like comfrey tea.

Does anyone "Smooth" and what do you use to make it and how do you use it?

Any other ideas for bits and pieces?

Stir fry, a quick curry dish (often just do a fairly dry spice mix and cook veg in that, serve with naan granita etc) or cook em on the side of your main or protein element to a dish and call it a melange of fresh summer vegetables.
In all seriousness having lived with a vegan who was well in to smoothies I think they're a waste of nice vegetables.

PS I'd forgotten the Welsh "smooth" instead of stroking a pet. Also my favourite Welsh word has to be cwtch.

I’ve tried making smoothies but wasn’t impressed at all, like Jimny says they’re a waste of veg. I make soups, stir fries or fritters.
Fritters just grate, spiralize, slice veg add herbs and an egg to bind it together fry or bake till done.

I tried kale in a smoothie once, it was disgusting (but being stubborn, I still finished it). Spinach and other mild leaves are OK but I'd rather have a salad.

Definitely not veggie smoothies but thumbs up for fruit smoothies
Coffee keeps me busy until it’s acceptable to drink whiskey.

I like fruit smoothies, but I don't tend to make them. Too thick consistency usually. I'd not consider putting veg in them - whoever thought of that??

Vegetable smoothies, Yuk! Enough to put a person off veg for life. Not a fan of fruit smoothies either unless a lot of milk is added.
