I freeze measured quantities for bunging in cake/loaves - lemon, black treacle & ginger, and cardamom are my favourites.

This one I like,  it is so simple and rather buttery.

This is one thread I will be visiting regularly. You can get a bit bored with variations on ratatouille and gratin but I wouldn't be without all those courgettes.
Gardening is an excuse not to do housework

Ive made this courgette  koftas recipe a few times. Only change I made was not to bake them together in the oven because it makes the koftas go soggy.

Just made this courgette. potato and cheddar soup https://www.bbcgoodfood.com/recipes/cour...eddar-soup
Didn't use stock cubes, and swapped a few small onions for the spring onions. Had some cheese that was a little past its prime, but the dogs liked the blue bits!!
Haven't blended it either ('cos I'm lazy) and I like a bit of texture in my soup.
Too hot to taste it so don't ask. Smile

EDIT - Its very nice - nice enough to make more!! Strong cheese taste so if you're not a cheese soup fan use less or milder cheese or less "blue" than I did. Didn't add nutmeg either.
Going to freeze most of it for a rainy day.

Sounds nice Veggie. Might try it when the weather cools down. Tonight I sliced round courgettes in half inch slices, placed on tray and seasoned well, put halved tomatoes in the gaps on the tray seasoned them and sprayed all with olive oil and roasted in a very hot oven. Served each roundel of courgette with a tomato on top as a side to our meal. Very basic and simple but tasted ok.
