Bulgur wheat salad with sundried tomatoes, olives, feta, loads of flat-leaved parsley and whatever else I find to chuck in, with a big green salad on the side. Set semolina pud with the last of the mixed berries from the freezer to follow.

With the first asparagus of the year - only 4 small spears but still incredibly early.
